Quinoa Salad Recipe
Ingredients:
1)1 cup quinoa, rinsed
2)2 cups water or vegetable broth
3)1 cup cherry tomatoes, halved
3)1 cucumber, diced
4)1 bell pepper (any color), diced
5)1/4 cup red onion, finely chopped
6)1/4 cup fresh parsley, chopped
7)1/4 cup feta cheese, crumbled (optional)
8)1/4 cup extra-virgin olive oil
9)2 tablespoons balsamic vinegar
Salt and pepper to taste

Instructions:
Cook Quinoa:
In a medium saucepan, combine quinoa and water or vegetable broth.
Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and water is absorbed.
Remove from heat and let it cool.
Prepare Vegetables:
